Chilequiles (a van recipe)

One of Geneva’s favorite meals was developed during the trip to the Canadian Maritimes. In Nova Scotia and New Brunswick there is not much Mexican food available. So after a process of trial and error, she developed this recipe for Chilequiles. She now serves it regularly to friends and family both in the van

Ingredients-

(amounts vary based on supplies on hand and number of diners)

  • Tortilla chips
  • Eggs (2 per person)
  • Red or Green enchilada sauce
  • Grated cheese

Optional-

  • Sour cream
  • Guacamole or avocado slices
  • Beans
  • Chunked or canned chicken

Steps-

  • Scramble eggs until well cooked. chilequiles2
  • Turn heat to low setting.
  • Layer tortilla chips over scrambled eggs. chilequiles3
  • Pour sauce over chips and cover for 3 minutes
  • Gently blend chips, sauce and eggs.
  • Serve hot and top with grated cheese and optional ingredients.

  1. I like my huevos on top of a corn tortilla, with two eggs in top, simmer till eggs are almost done, then add white cheese and cover till cheese melts. Top with green salsa!

  2. Going to try this if I find enchilada sauce. Looks yummy!! It’s so easy to get stuck and cook the same things over and over again when you live in a van. Thanks for sharing this!
